I'm currently using an Intel 12400F CPU on an Asus B660m WiFi motherboard and I'm planning to upgrade my GPU to a 9070XT to replace my 3070. Given this setup, which CPU should I consider upgrading to?

Your B660m motherboard supports 12th, 13th, and even some 14th gen Intel CPUs. If it's a good quality board, upgrading to something like the i5-13600 might be a cost-effective way to go, but if it’s lacking in VRM quality, I'd stick with AMD for a more future-proof setup.
You might want to look at the i7 12700KF or the 13700KF as solid choices. They're powerful options that should work well with your motherboard, giving you a nice performance boost without needing a complete system overhaul.
