I'm looking to upgrade my GPU and I'm currently using a Ryzen 7 5800X. What's the best GPU I can get that won't cause any bottlenecking issues? Or is that something I shouldn't be too concerned about when making my decision?

The Ryzen 7 5800X is still a solid CPU! I’ve got mine paired with a 5070 Ti, and I rarely see any bottlenecks in about 90% of games at 1440p. If you're gaming at 1080p, consider the 9060 XT. For 1440p, the 5070 Ti should treat you well. When it comes to 4K, I doubt you’d run into bottleneck issues, even with something like a 5090, though that setup could be weird.
