I'm currently using a GTX 1660 Super paired with an Intel i5-11600KF, and I'm looking to upgrade my GPU. I want to make sure I avoid bottlenecking, especially since I'm considering cards like the 5060 Ti, 4060 Ti, or the RX 9060 XT for gaming at 1080p 144Hz. I might also think about transitioning to 1440p to optimize performance. What would you recommend?

Honestly, any of those cards would work fine, but the 9060 XT is a solid choice. It typically gives you the best bang for your buck and handles high resolutions quite well.
The 5060 Ti with 16 GB is pretty good, but between that and the 9060 XT, the latter usually comes out cheaper. Just keep an eye on prices because they can vary a lot. Either way, you're not likely to hit a bottleneck with those cards.
I’d go with the RX 9060 XT, it has 16 GB of VRAM and should give you a nice performance boost without bottlenecking your CPU at both 1080p and 1440p.
