I'm looking for recommendations on the best used GPU options for my Ryzen 5 5600 within a budget of $300. I know that going used is the way to go for this price point, but I'm curious which GPU would provide the best performance for my setup.

If you can find a 5060 for around $300, that's a solid choice. Just make sure your power supply can handle it. Also, if you’re okay with the used market, you might come across a 2080 Super at a good price, but I'd recommend the 5060 for the additional warranty and better support.
I’ve got a similar setup with a Ryzen 5 5600 and I'm currently using a 9060XT. It's been working well for me. Just curious, what power supply are you using with that setup?
I'm using a 650W PSU, so I should be fine on that front!
