I recently bought a new iPad for my daughter and had the store specialist add it to my existing AppleCare One plan. However, when I set up the iPad using her Apple ID, it got removed from the plan. I understand I need to switch to my Apple ID in the settings to restore the coverage, but I want her to continue using her own Apple ID for messages, FaceTime, and the App Store. Is there a way to make this work, or am I out of luck?

AppleCare One is indeed tied to the Apple account. If you'd like, you can still get AppleCare+ for the iPad independently, which might be a better option if you want her to keep using her own Apple ID.
Unfortunately, all devices need to be linked to the same Apple account for AppleCare One. So if your daughter uses her Apple ID for the iPad, it can't be covered under your plan.
This seems to be how Apple structured their plans. Allowing family members to combine devices under one plan would likely hurt their profits. You could check if the iPad is eligible for a separate AppleCare plan; it might save you some money in the long run!
