I'm planning to set up a new PC with a 240GB SSD and a 500GB HDD because my old 480GB SSD broke. I'm curious if games like Red Dead Redemption 2 and Far Cry 6 will run without any noticeable stutters or issues using this setup. Will the performance be adequate?

Yeah, the load times might be a bit longer on the HDD, but once the game is loaded, you shouldn't notice any major differences in gameplay. It should work fine!
There's a chance for some stutters, but it really depends on how the game is designed. Most modern games are optimized for SSDs due to their large asset sizes, but games released before 2021 usually run fine on HDDs.
