I have an ASUS TUF Gaming 850W Gold PSU that only has three 8-pin PCIe connectors for my CPU and GPU, while my PNY 5070 TI OC GPU comes with a 3x8 connector. I'm considering using a 12VHPWR cable that came with the PSU, but I'm not sure if it's safe to do so. Do I need a PSU with more slots, or can I make this work?

Yeah, it's usually fine, but check the cable first. Make sure all the pins are intact and that nothing looks off, like recessed or bent pins. That kind of stuff could cause issues down the line.
Those Nvidia-supplied adapters can be a bit questionable in quality. It might be better to go for a direct PSU to 12vhpwr cable or a native one to ensure safety and stability.
