I'm looking to upgrade my PC's storage and want to use my existing internal SSD as an external drive. If I get a SATA to USB cable, is that enough, or do I need a separate power cable for it? Also, should I consider the brand of the SATA to USB cable I buy?

No need for an extra power cable; the SATA to USB cable will do the trick. An enclosure is probably your best bet, but even a bare cable should work if you're looking to save a few bucks!
