I recently found an old laptop and took it apart, and I managed to get out a 500GB WD Blue hard drive. I'm wondering if it's possible to convert it into an external drive, and if so, how exactly do I do that? Do I just need to purchase a SATA to USB adapter?

You can find a decent hard drive enclosure for about $15. It’s a solid way to turn that old drive into something useful!
Honestly, I wouldn’t really recommend it. That old 500GB drive is likely to be slow and might not be very reliable. You might be better off saving up for something newer.
