I've been really frustrated with the latest iOS update; it totally changed the look and feel of my phone, and I just want to return to how it was before. Is there any way to revert back to the old version or at least make the appearance more normal?

You can't really change it back, but I'm really curious: what exactly do you dislike about the new look? I think it has its perks!
Unfortunately, there's no way to roll back the update once it's installed. However, you can adjust some settings in the accessibility options. Try reducing transparency or switching your display settings to a tinted option if that helps!
I don't like that shiny liquid glass effect; it just feels weird to me.
