I'm currently running a Plex media server using Docker Compose, but I got into some trouble with Portainer and accidentally ended up installing Docker Desktop. My question is: can I safely uninstall Docker Desktop without messing up my setup? Should I be concerned about losing my media files? Thanks for any help!

You probably don’t have to worry about losing your media files. Just make sure you’re following the right tutorials. The default Ubuntu installation often uses the Snap version of Docker, so you might need to double-check that you're not using that one. If you get Portainer sorted out first, you can then focus on Plex later.
What OS are you using? If your media isn’t stored directly within the containers and is properly mounted, then you really shouldn’t have any concerns about your media.
Your data should be alright, but just to be safe, backups are always a good idea! When you mention 'images', are you talking about the individual applications and their settings? That could be where you might run into issues.
