I recently got an MSI RTX 3080 X Trio and my power supply is strong enough. However, it only came with two PCIe cables. Is it okay to use two dedicated PCIe cables along with one daisy-chained cable to complete the connectors?

From what I've gathered, the RTX 3080 can hit a maximum power draw of around 450W, plus about 70W from the PCIe slot. This means you're actually within the safe limits with your setup – one dedicated cable and one daisy-chain should work fine if your power supply is decent. Just make sure your power supply can handle it without issues.
I've got a Cooler Master MWE 850W V2 myself, and I can confirm that the RTX 3080 does require three PCIe connections. Using a daisy chain can be risky if you're pushing the card to its limits, so keep an eye on power management.
