I'm trying to find out if it's possible to use my new 14" MacBook Pro with the M4 Max chip to connect two 4K monitors at 60Hz alongside its built-in display. I'm looking for recommendations on what adapters or docks I might need for this setup since I already have a Lenovo Thunderbolt dock that works with my Asus ProArt 16 laptop.

You can definitely run dual 4K displays with your M4 Max MacBook Pro! The specifications say it can support up to four external displays: you can have three with 6K at 60Hz via Thunderbolt and one 4K at 144Hz through HDMI. So you're good to go! Just make sure your cables and dock are up to spec for 4K at 60Hz, and you should be all set.
