I just got my hands on a 5070 Ti GPU, but my 12-pin cable isn't arriving until Monday. I want to start using the card today, and I have two PCIe cables. The adapter that came with my card needs three connectors to work. One of my PCIe cables has two different connectors—can I safely use that one for two of the three connections on the PCIe to 12-pin adapter?

Yeah, you should be fine to do that! The 5070 Ti only needs about 300 watts, which isn't too demanding compared to some of the higher-end GPUs. Just make sure each cable is connected properly, and you should be good to go.
For what it's worth, Corsair has a specific cable that could retrofit your PSU to be PCIe5-compatible without any fuss. Just be cautious with the connections—don't confuse the 8-pin connectors on your PSU with the ones for standard PCIe, since they deliver different wattages.

I might've thrown it away or it didn't come with one. I bought my PSU a couple of years ago and only ran a 2060 Super before upgrading to this 5070 Ti. I checked my cables but only found one PCIe cable, so I figured using two would bridge the gap until my 12-pin arrives.
