I connected my iPhone to a work computer to print a photo, allowing the computer access to my phone's settings and data. After unplugging it, I noticed that the data shared was gone. I'm curious if the files that were available during that brief connection could still be accessed by IT later on. I work for a small city government and I'm not sure how this data management works. I doubt IT had time to remotely access my phone, as the whole process took only a couple of minutes.

If you download files directly to the desktop drive, there's a chance they could be accessed. But if you just viewed or printed them from your phone, they typically wouldn't be saved.
