If I submit a .docx file for a class assignment, is there a chance my professor can see the version history or any edit history associated with that document? I'm concerned about privacy and any changes I might have made that could be visible instead of just the final submitted version.

The professor can only see edits if the tracking changes feature was enabled when you made the changes. If you forget to merge changes, the history could be visible.
