I just got myself a 5060 Ti since I'm upgrading my PC, but I'm seeing benchmarks online that suggest it can only manage around 60 FPS at 1440p. I'm curious if that's the typical frame rate I could expect while playing on normal graphics settings or if those benchmarks are run on max settings, which could make it look worse than it actually is on lower settings.

Definitely make use of DLSS and its frame generation feature if you're trying to maintain a higher FPS. In most games, you won't even notice much difference in quality, and it helps keep things smooth.
If you’re using the 16GB version, you should be fine with 1440p, just remember that for some modern games, especially open world ones, you might have to dial down the settings a bit. The 8GB version isn't as friendly here.
It really varies based on the game. I've noticed big differences; for example, a lightweight game performs way better than something like Cyberpunk. I have a 5060 Ti with 16GB paired with a 1440p ultrawide monitor, and I'm hitting 140 FPS or more, but I'm not cranking up the graphics on the optimally demanding AAA titles.
