Before you make any big changes, you could try creating a LiveUSB of Ubuntu to test its connectivity with your university's WiFi. This way, you can see if the login process works without fully committing to a switch.
Linux Mint is basically a reskinned version of Ubuntu, so it should be using the same network manager. Most likely, the underlying issue relates to settings rather than the OS itself.
