I bought the RM850-E PSU to work with a Strix B650-A motherboard and an ASRock Steel Legend 9070XT GPU. The GPU requires two 8-pin connectors, but I'm finding that while the 6+2 cables fit the GPU side just fine, they don't work on the PSU end—the +2 pin doesn't fit into the PSU. I'm using the cables labeled for PCIe, not CPU, as I found online that they are different. Should I consider this PSU insufficient due to cable issues? What cables do I need to be using here?

It sounds like you're trying to connect the cable the wrong way. The 6+2 connector should only plug into the GPU, not into the PSU. The PSU end should be a solid 8-pin or sometimes even a 9-pin. Double-check that you're not mixing things up; it happens! Also, there are cables like the 12VHPWR that can turn into 6+2 pins on the GPU end if you need them.
So, can I use a 12V-2x6 into the PSU and then a dual PCIe 8-Pin (6+2) for the GPU? That way, I've got two 6+2 pins for the GPU and a 12V going to the PSU.
