I'm building my first PC and I'm a bit puzzled about how the PSU cables work. I read that the Ryzen 5 7600 only requires one 8-pin connector for power. Would connecting two cables cause any damage? I think having two would look better than just one.

Using two cables is totally fine! It won't cause any damage to your system. The extra cable won't hurt anything, just isn't necessary for the Ryzen 5 7600.
Each cable can handle up to 175w, and the 7600 only pulls about 90w at peak. So while having two cables doesn't provide extra power, it could give a bit more stability if you're into the aesthetics. If you prefer the look of two, go ahead!
Thanks for the info!
No worries about damage at all. Just remember, power is drawn rather than pushed. Your CPU will only take what it needs, so whether you have one cable or two, it's all good!
Thank you for clarifying!

Small note: The 8-pin EPS 12v can actually deliver over 300w. But yeah, having that second cable just helps with stability. Appreciate the input!
