I sold my old iPhone 11 and made sure to delete everything from the gallery and recycle bin. I also erased all content and settings. However, when I checked the phone later, it asked me to create a new Apple ID to log in. Now, the buyer is asking for the password to unlock the phone. If you used the 'Erase All Content and Settings' option on your iPhone 11, your data should already be wiped and unrecoverable. What the buyer is seeing is likely the Activation Lock tied to your Apple ID. You shouldn't give them your password. Instead, go to iCloud and remove the device from your account; then they can set it up without any issues and your data will remain erased.

I've already removed the device from my Apple ID. The password is still not working for them.
