I'm considering buying a 5080 Gigabyte Windforce SFF, which comes with a "1x 12V-2×6 to 3x PCIe 8pin adapter." I currently have a Seasonic Focus Gold 750FX power supply that has 5 CPU/PCIe slots but only two PCIe cables, each with dual 8pin connectors. I'm wondering if I really need to connect three PCIe cables to this adapter, especially since the official Seasonic 16 pin cable only uses two slots. Locally, I'm having trouble finding a compatible cable for Seasonic. Also, I'm a bit confused because my existing 8pin cables are like Y cables. I understand that I shouldn't use both headers on the same cable due to the high voltage. I do see that CableMod offers a compatible 16pin cable for Seasonic, but it comes in various configurations (2x8, 3x8, or 4x8), which adds to my confusion.

To ensure your GPU works properly, try to not leave any connector on the adapter unused. So, yes, it’s better to utilize both connectors from your existing cables rather than connecting just two 8-pin connectors. Just keep in mind the load distribution across the cables, it should be fine if you have a good PSU.
It's generally better to use the highest quality connection you can. Your setup with a single double 8-pin PEG connector to 12VHPWR is solid; it's reliable. If you're trying to avoid shipping issues, that adapter should be okay to use with your 2 8-pin cables, but just be cautious with the load.
