I just got my 5070 Ti and noticed that the MSI 12VHPWR adapter recommends using three separate 8-pin PCIe connections instead of a split cable. My PSU is a Corsair RM850x, which comes with two 8-pin (6+2) cables that split off to provide four connectors in total. Am I correct in thinking that I should get an additional 8-pin PCIe cable, or can I make this work with my existing setup?

You can actually use the split cable with your PSU. Corsair's cables are rated for 300W, so they can handle it. The adapter's instructions aren't wrong, but they might be a bit over-cautious in this case.
For that setup, you should definitely go with two separate cables and one that has a daisy chain. It'll work just fine! Just make sure to connect them correctly to avoid any issues.
