I'm learning programming for fun and have created a few simple websites that I'd like to share with others to get some feedback. While I have a server and some unused domains ready, I wonder if using a Netlify link might make other programmers take me less seriously. Does it really matter if my project is hosted on Netlify?

I'd say it might lessen your credibility a bit, but it's not the end of the world. Linking up a custom domain takes no time at all! If you're just having fun with these projects, then go for it, but if you're looking to impress, spending a little time on a domain might be worth it.
Honestly, if someone judges your projects based on the hosting platform, their opinion isn’t worth much. A lot of folks understand that experimental projects might not have a custom domain right off the bat. So don't stress about using Netlify or similar platforms, it's totally fine for learning!
