I recently underwent a nose job for health reasons, and now that I'm mostly healed, my iPhone won't recognize my face anymore, which is pretty frustrating. I've tried resetting all settings (but that requires Face ID), and I can't even turn off the stolen device mode because it also needs Face ID. Can anyone help me troubleshoot this?

Have you tried enabling the ‘Use Face ID with a mask’ option? It might just let you in with your mask on, which is worth checking out!
Have you tried updating your Face ID? You should still be able to unlock your iPhone using your passcode if Face ID isn't working. I remember once I hid the camera while trying to add my face and it just let me in with the passcode instead.
It sounds like you're in a tough spot! If your stolen device protection is on and you can’t authenticate with Face ID, unfortunately, you'll need to back up your data to iCloud and reset your iPhone using a computer. Just keep in mind, you can’t back it up to a new computer without first pairing it, which might ask for Face ID then too.
You might need to erase your iPhone using a Mac or PC. This could require you to go into recovery mode even if you know the device passcode, since you can't disable Find My iPhone. After erasing, you should be able to restore it from your last backup.
