I'm trying to help my girlfriend switch from legacy BIOS to UEFI so she can play BF6 with me. I used the MBR2GPT tool, which said it successfully converted her setup. After changing the BIOS to UEFI and restarting, we're now faced with a BSOD that says "winload.efi is missing." I've also created a Windows installation USB just in case, but the keyboard and mouse are unresponsive on the blue screen, so I can't access any settings or install a fresh Windows. Any advice on resolving this issue, including formatting the drives to GPT?

If you can manage to boot from the USB and perform a fresh install, that’s a good start. Make sure you select the disk, clean it, and convert it to GPT. If you encounter the error "Windows cannot install required files. 0x80070015," it usually relates to a problem with the installation media. Check if your USB drive is working properly and try recreating it with the Windows Media Creation Tool.
It sounds like you ran into a bug with a recent Windows update that can disable your mouse and keyboard in the recovery environment. Instead of booting into the existing installation, try booting directly from the USB installation drive. From there, you should be able to run a startup repair or do a fresh installation of Windows.
For future issues, if you can access Windows (or Safe Mode), try checking the Minidump folder for crash logs. These files can provide more insight into what caused the BSOD. Use a file sharing site to upload any dump files you find so others can help analyze them.
