I have a virtual machine that lost its internet connection, so I disabled the Hyper-V network adapter in the settings to troubleshoot. However, now I can't start the VM, and I'm worried about losing my data and configurations since my last restore point is several days old. In Azure, the VM appears to be running, but I can't connect to it via Remote Desktop. Is there any way to resolve this without losing everything?

Just curious, why did you disable the NIC in the first place? Sounds like you were following some advice that didn’t pan out! To reset the network, you usually don’t need a new NIC. You can re-enable the existing one and see if that helps.
Honestly, it’s kind of risky messing with the NICs inside the guest OS directly. If resetting the network settings doesn’t do the trick, you could try mounting the OS disk to a different VM to recover your files and settings. Just make sure to back everything up!
You might want to try resetting the network settings for the VM. This often helps in cases like yours where disabling the NIC causes issues.
