I just scored a 5070ti at MSRP and now I'm on the hunt for a CPU to go with it. My budget is around $250, and I want something that can handle both gaming and productivity tasks like compiling code and building applications. Any recommendations?

Do you have a motherboard already? If not, you might want to look for a CPU + motherboard combo. Microcenter usually has good deals on those. If you already have a motherboard, just check the socket type and size for compatibility!
