If your MacBook is from the Apple Silicon lineup or has a T2 security chip, using "Erase All Content and Settings" will delete the decryption key for your data, making it unrecoverable. So you should be covered there! Just double-check which model you have.
I think my Mac is a 2017 model, so it probably doesn't have the T2 chip you mentioned.
