I'm currently using Linux Mint Cinnamon and I have over 75 Audible titles that I need to convert to MP3 format so I can play them on my iPod. I'm looking for an easy way to do this conversion. Would it be better to switch to a Windows machine for this task instead? I remember using something called aax and booklib back when I was on Windows, but I wasn't very skilled at it.

You might want to do a quick search online. I found OpenAudible which could be helpful for your needs. There are also command-line options if that's more your style.
Check out AudibleTools! It works with ffmpeg in the background and is pretty straightforward to use for converting your titles.
If you're comfortable with bash, you could write a simple script using ffmpeg to handle the conversion. Just make sure you have the right codecs!
A great tool you can use on Linux is Libation. It's user-friendly and will help you convert those titles without too much hassle.
