How can I easily replace my iPhone X on AT&T without dealing with them directly?

I'm looking to replace my iPhone X, which I use as a backup phone. I currently have two phones on AT&T, an iPhone 11 Pro Max as my main device and the iPhone X for emergencies. Upgrading my iPhone 11 Pro Max was a breeze through the Apple Store app, as it seamlessly linked to my AT&T account. However, I'm facing several challenges with my iPhone X. First, I prefer not to go through AT&T because their only option is home delivery, which has caused issues for me in the past. Unfortunately, my iPhone X is stuck on iOS 16 and can't run the Apple Store app that requires iOS 17. I tried using Safari to purchase a new iPhone, but it doesn't automatically recognize my phone number or offer the replacement option. Also, since my iPhone X uses a physical SIM and newer models mostly utilize eSIM, I'm unsure how to transfer my number automatically to the new device. Am I overthinking this? Can I just order a new iPhone Air from Apple's website for in-store pickup? If I chat with a specialist on Apple's site, will they help me with replacing my AT&T iPhone X while keeping my number? Or will I need to go to an AT&T store?

That's good to know! I tried doing it online, but when I picked AT&T, it added a $35 activation fee, which seemed unnecessary since I already have service. I ended up choosing an option to activate later instead. I really want to avoid extra fees!
