I'm having an issue with my phone and I need to restart it completely. I'm really worried about losing my pictures, so I'm trying to set up a backup in the cloud. I recently subscribed to Google One, but the backup process seems really slow and it looks like there's no progress. When I logged into Google Cloud from my computer, I could see all my pictures, even the ones I deleted before or can't access from my phone anymore. Does this mean my pictures are already backed up on Google? It's surprising because my phone shows that the videos and pictures take up about 67GB, but Google shows that only 23GB is used. If I restart my phone, will the pictures get deleted?

Yes, Google Photos and Google Drive may still hold deleted pictures that were on your phone at one point. Keep in mind that if you’re using Google Photos, they often compress images to save storage, which means you’ll lose some quality. If you’re concerned about losing files, consider connecting your phone to a computer and transferring the files to an external hard drive for peace of mind.
Just so you know, Google Photos (the free version) uses compression, meaning your photos aren’t stored at full resolution. If that bothers you, you might want to delete everything and stop using the service. But honestly, if you just want a backup, don’t stress too much!
Oh lol actually that's what I wanted, to save the pics I don't mind Google having them LOL.
By default, Google compresses your photos when storing them in the cloud, so they might not be the original files. If you want to keep the original quality, it’s a good idea to back them up using SmartSwitch or transfer them to an SD card or a USB drive instead.
