We have all our client machines set to auto-update. We also remind users to reboot if they forget. This policy has worked perfectly for us—no update issues in a decade! The key is to keep the systems as standard as possible and avoid complicating things with unnecessary tweaks.
Using Azure ARC with Azure Update Manager is a solid choice. Keep in mind that WSUS has been deprecated for over a year now. While you can still use it, Microsoft isn't investing in improvements. You might want to check out some third-party RMM tools as alternatives—they can be really helpful.
