I know that usually, touching a metal part is a way to prevent static, but do I need a power supply that's actually grounded? The issue is I live in Vietnam where most outlets lack grounding. Plus, I tend to have sweaty hands, which makes me worried about dropping parts. Can I wear latex gloves while building, or will that make things worse?

Touching the metal case frequently should help with static. If you're in a humid environment, that's actually a good thing because the risk of static discharge is lower compared to a dry place. Overall, just keep touching the case while you're working, and you should be fine. Today's hardware is built to handle some static much better than older models.
