I'm looking to use a PCIe 8-pin connector to power some LEDs that I'm planning to set up in my PC case. Instead of cutting the PSU wires, I want to know if there's a connector or adapter available that can help me do this without damaging the original setup.

You could try using a PCI-E cable extender. It's a lot cheaper than cutting into the PSU's original wires, and you'll still have your main cables intact for future use.
Honestly, it seems like your best bet might be to cut down a cable you have on hand. I'm not finding any ready-made female pigtails that connect to the 8-pin male end you mentioned. You could also look at getting an extension and trimming off the unused side. Just make sure you're using 12v LEDs, as the PCIe connector can deliver that, while the PSU has other outputs like 5v and 3.3v that won't work for your setup.
This whole project sounds a bit risky to me! If your LED setup pulls a lot of power, it might be safer to go with a USB cable for power instead. It would definitely be a more secure option.
