I really want to be a good brother and let her take pictures, browse the gallery, and make calls. Is there a way to set it up so she only sees photos taken on a specific date, like tomorrow?

You could also transfer your personal files to an SD card and just give her the phone. That way, she won't have access to anything you want to keep private.
One option is to create a separate profile on your phone just for her to use. This way, all her pictures and apps will be stored in her own space, keeping your stuff private for the future too! It’s a pretty handy way to let her borrow your phone without the risks.
That approach didn't work for me either, unfortunately.
