I've been considering a price range of $700 to $800, but I'm not certain if that's reasonable.

I wouldn't go above $600 personally. There’s a lot of competition, so it’s good to price it attractively.
You might want to try using PCPartPicker to get a rough estimate on the value of your parts. Just a heads up, I put my parts in there, and it quoted me around $1350, which seemed really high for me too.
