For most workloads, particularly on platforms that support both DDR4 and DDR5, fast DDR4 (like 4000/16-16-16) is competitive across the board, except in specific cases requiring extreme CPU bandwidth. These days, intense workloads are usually offloaded to the GPU, so the performance gap between DDR4 and DDR5 is minimal, making DDR4 perfectly suitable for what you plan to do!
Honestly, I think you're better off with a focus on RAM capacity rather than just speed. DDR4 should serve you well!
