I personally lean towards using OneDrive's known folder move combined with Enterprise State Roaming. If that's not on the table, FSLogix would be my next choice.
FSLogix can be a fantastic solution if you're willing to put in some time for configuration and management. One neat feature is that if a user's profile gets messed up, you can restore from a backup. Just keep in mind you'll need a solid bandwidth to your file server and low latency for the best performance.
If you're sticking to a single RDS with no plans to expand, local profiles can totally work without much hassle. But if you're looking even a bit ahead—like possibly adding more session hosts—setting up FSLogix now will save you headaches later.
I had a great experience using FSLogix in a VMware Horizon setup. It really helped minimize issues during user logins, especially when spinning up new machines. One tip: make sure to automate the cleanup of profile folders for users who leave; otherwise, you'll end up with a lot of unnecessary clutter.
