I've got a bit of an unusual situation at my company and could really use some advice. Several of us in IT have decided to resign and will be leaving in about two weeks. Our IT manager has recently asked us to hand over full access to our email inboxes while we're still working here, claiming he needs to read our emails during this transition. We all strongly oppose this request. Is this standard practice, and is it even legal to ask for this? Or is he just overstepping?

You should definitely check if there’s a security team that can review these requests. Technically, the emails belong to the company, so they could grant access if the right approvals are met.
Honestly, it’s concerning that your IT manager doesn’t have admin access. If they really needed to access company emails, there should be a clear protocol in place for such access.
I’m not a legal expert, but this sounds like something HR should handle. You shouldn’t feel pressured into giving access, especially when there are standard procedures for such situations.
You have every right to not comply with that request. It’s your inbox, not his, and it should be managed according to company policies. I'd recommend talking this through with HR or legal.
In Europe, this request might cross some legal boundaries, especially regarding privacy. It seems a bit excessive for him to demand access directly instead of going through proper channels.
