I recently got a new PC tower that has a USB-C port, but my motherboard doesn't support it. Since I currently have no use for the USB-C port, can I just leave the cable disconnected for the time being?

It's totally fine to leave it disconnected. Just make sure to tuck that cable away so it doesn't get snagged on anything.
If you don't need the port, you can just leave it alone. Some people suggest taping the connector for safety, in case it would accidentally touch something.

Yeah, just some normal tape should do the trick! It's better to be safe.
