I'm looking to buy RAM and found that 32GB of 6000MHz CL30 costs €45 more than 32GB of 6000MHz CL36. Is the difference in latency significant enough to justify the price increase?

Nope, I don't think it's worth the extra cost. From what I understand, the performance boost is only around 1-3%. That's not a big deal for most uses.
