I'm considering an upgrade to an AIO cooler and was curious if replacing the stock fans with JONSBO ZB-240B fans would make a noticeable difference in performance.

It's pretty easy to swap them, but the actual gains in cooling performance will be minor. If your goal is aesthetics, go for it, just keep in mind the performance might not improve significantly.
Swapping fans usually doesn't lead to significant performance improvements. As long as the fan is properly mounted, you'll get decent cooling, but faster fans bring diminishing returns and won't drastically change temps.
I've always used Noctua fans in my AIO builds. Realistically, performance won't differ much, but it’s a good idea if you're seeking quieter operation or better aesthetics, just don't expect huge changes in cooling efficiency.
You should think about why you want to swap them. The temperature differences won't be huge unless you're focusing on aesthetics. I switched my stock fans for something different, and as long as they have good airflow, you should be fine.
