I'm considering upgrading from my Ryzen 5600X to either a Ryzen 5700 or 5800X3D but I'm hesitant because of the high RAM prices associated with transitioning to AM5. I'm also looking to pair the new CPU with an RTX 5070, but I've heard that the 5600X may limit that graphics card's performance. What do you all think?

Upgrading depends on the games you play. If they're CPU-bound, then yes, the 5600X could be a bottleneck. However, the main issue is the price; 5700X3D and 5800X3D are hard to find at a reasonable cost right now.
I upgraded from a 5950X to a 5700X3D last year and found it to be a solid decision. If you run your system well, like using Ryzen Master for tweaks, you might not need to rush into buying a new CPU.
The prices for used 5700/5800X3D chips are as inflated as RAM. It might not be the best solution. Personally, I'm opting to wait and see how things shake out with pricing.
It really comes down to what you're playing and at what resolution. The AM4 X3D chips are seeing crazy price inflation. Additionally, switching to an Intel setup with a DDR4 motherboard might be worth considering since those CPUs are usually on sale.
If you can find a 5800X3D, I'd recommend it. Just make sure to have a better cooler than the stock one from the 5600X!
