Just a heads up, the P3 Plus uses QLC flash, which isn't the most durable and tends to slow down after a few years. I suggest going for something with TLC flash like the Kioxia Exceria Plus G3 or the WD Blue SN5000 for better longevity.
Great build overall! If I were you, I’d consider switching the SSD to a Samsung 990 EVO Plus for better performance. But if it’s too pricey for your budget or unavailable, the P3 Plus is still a decent choice—it won’t make a huge difference in day-to-day use unless you do a direct comparison. Also, nice pick on the PSU; it's rated A on the tier list!
Your list looks solid! Don't worry too much about getting 6000CL30 RAM; you could easily go with CL34 or CL36 instead if you find a better deal for under $200. Just grab that if you see it, and save some cash!

The Samsung 1TB EVO Plus is just $22 more than the P3 Plus, so I'll keep it in mind while checking local prices. I started with the PCMR list and adjusted the motherboard, SSD, RAM, and added a monitor.
