I'm currently repasting my EVGA 2060 KO Ultra because I was experiencing high hotspot temperatures. I used Arctic MX-7 for the application. Do you think I applied enough thermal paste, or did I go overboard?

That's a fair amount! I usually like to spread it thin with an edge of an old credit card or something similar. Just a thin layer will do the trick; no need to flood it. Easier to clean up later if it seeps out too!
