The 5070 is a decent choice since it comes with 12GB of VRAM and utilizes NVIDIA's technology. It should serve you well for a couple of years—maybe even longer—depending on how game developers optimize their titles. If you can find one at MSRP, the 9070 XT is notably more powerful and could be a better investment.
I have a setup with a 5700X3D and the 5070, mainly for sim racing, and I find it quite good. It handles everything I throw at it without issues. Considering the performance-to-power ratio, I didn't find anything that suited my needs better at this price point.
