I'm looking to purchase the Asrock 9060 XT Challenger with 8GB of VRAM because it's about $30 cheaper than other 8GB 9060 XTs, which is important for my budget. I'm upgrading from a 3050 with 8GB. I came across a video that suggested the performance of this model isn't that great due to its lower price. Is that true? I'm not very knowledgeable on these specs, so I'd appreciate any insights.

I have the 16GB version of the Asrock 9060 XT Challenger, and it rarely gets above 70°C under load. While 8GB might limit you in some games, the cooling shouldn't be a major issue. Budget models are great for saving some cash!
