I'm building a budget PC using the Xeon E5 2680 V3 processor with an RTX 3050. I've seen some benchmarks suggesting it performs well for my needs. I've had my E5 2680 V3 running smoothly for three years now, playing games with a 2070 Ti and 32GB of RAM. The only issue I've faced is that sometimes it won’t boot unless I remove some RAM, but that’s a minor inconvenience.
You shouldn't have an issue with the Xeon paired with the RTX 3050; it can handle gaming quite well most of the time. Just think about the pricing; sometimes an AM4 build with a Ryzen 3600 or 5600 isn't much more expensive and might be worth looking into!
