I'm currently using an i5 10400F CPU in my PC, and I've got a chance to pick up an i7 11700T for $200. I've also got a 6800XT GPU, and I'm worried that the i5 might be limiting its performance. I'm curious if I would notice a significant increase in FPS while gaming. I play a wide variety of games. Do I also need a new motherboard for the i7?

Upgrading to a standard 11700 would definitely give you a performance boost, but since the T version is clocked lower, it might not be much to write home about. I suggest looking elsewhere for a CPU upgrade.
